Muriel's Mainichi Cooking presented by Hawaiʻi Gas is a new JCCH video series inspired by Muriel Miura's mainichi まいにち (everyday) recipes from the JCCH archives that were generously provided by her daughter, Shari Ling. Widely recognized as the face of The Gas Company (now known as Hawaiʻi Gas), Muriel gained popularity through classes, demonstrations, conferences, cooking shows, pamphlets, and cookbooks.


Ingredients (8)

1 package somen (noodle)

Dashi (broth):

4 cups water

1/4 cup dried shrimp

1 tablespoon salt

1 teaspoon MSG (monosodium glutamate)

1/2 teaspoon shoyu

Garnish:

1/4 cup green onion, chopped

10-12 pieces ajitsuke nori (seasoned seaweed)

Cook somen in 2 quarts boiling water for 3 minutes. Drain. Rinse with cold water. Drain. Refrigerate in GAS refrigerator for one-half hour or until chilled.

Combine Dashi ingredients and simmer over medium flame for 30-35 minutes. Cool.

Pour dashi over cold noodles and garnish with nori and green onion to serve.

Yield: 4-6 servings.
