Muriel's Mainichi Cooking presented by Hawaiʻi Gas is a new JCCH video series inspired by Muriel Miura's mainichi まいにち (everyday) recipes from the JCCH archives that were generously provided by her daughter, Shari Ling. Widely recognized as the face of The Gas Company (now known as Hawaiʻi Gas), Muriel gained popularity through classes, demonstrations, conferences, cooking shows, pamphlets, and cookbooks.
Ingredients (7)
Wiki Wiki Lilikoi Cupcake:
1 box yellow cake mix, regular size
2 eggs
1 cup plus 2 tablespoons lilikoi concentrate
(Prepare lilikoi concentrate by diluting one 6-ounce can of frozen lilikoi concentrate with 1 cup of water.)
Lilikoi Frosting:
1/2 cup butter or margarine, softened
3 cups sifted powdered sugar
3 tablespoons lilikoi concentrate, as prepared for cupcakes
1/2 cup chopped walnuts

Lilikoi Concentrate:
Dilute one 6-ounce can frozen lilikoi concentrate with 1 cup of water. Measure 1 cup plus 2 tablespoons for lilikoi concentrate in recipe.
Empty yellow cake mix into a large mixer bowl.
Add eggs and lilikoi concentrate and beat at medium speed until batter is smooth.
Place paper cupcake cups in muffin pans and fill half-full with batter.
Bake.
Temperature 350° F.
Time: 20 to 23 minutes.
Cool.
Frost with Lilikoi Frosting.
Makes 2 1/2 dozen.
Lilikoi Frosting:
Cream butter and stir in powdered sugar and lilikoi concentrate.
Blend until smooth and fluffy.
Frost Wiki Wiki Lilikoi Cupcakes and top with walnuts.
