Muriel's Mainichi Cooking presented by Hawaiʻi Gas is a new JCCH video series inspired by Muriel Miura's mainichi まいにち (everyday) recipes from the JCCH archives that were generously provided by her daughter, Shari Ling. Widely recognized as the face of The Gas Company (now known as Hawaiʻi Gas), Muriel gained popularity through classes, demonstrations, conferences, cooking shows, pamphlets, and cookbooks.
Ingredients (10)
1/4 cup butter or margarine
1/2 cup onion, chopped
1/2 celery, chopped
2 tablespoons flour
1 tablespoon sugar
1 1/2 teaspoons salt
1 2/3 cups evaporated milk
1/4 cup prepared mustard
1/4 cup cider vinegar
4 cups potatoes, cooked and sliced 1/4-inch thick

Melt butter or margarine on thermostatically controlled GAS top burner set at 225°F.
Add onion and celery; saute 1 minute.
Combine flour, sugar, and salt; add, stirring constantly to make a smooth paste.
Slowly pour in evaporated milk, blending ingredients evenly to prevent lumping.
Stir in mustard and vinegar; bring to boil.
Pour over potatoes and mix gently.
Serve hot or cold.
Yield: 4-6 servings.
BLUE FLAME NOTE: Sliced ham, luncheon meat, sausage, and/or eggs may be added to salad.
