Muriel's Mainichi Cooking presented by Hawaiʻi Gas is a new JCCH video series inspired by Muriel Miura's mainichi まいにち (everyday) recipes from the JCCH archives that were generously provided by her daughter, Shari Ling. Widely recognized as the face of The Gas Company (now known as Hawaiʻi Gas), Muriel gained popularity through classes, demonstrations, conferences, cooking shows, pamphlets, and cookbooks.
Ingredients (6)
2 10-ounce (280 g) packages mochiko (sweet rice flour)
(750 mL) 3 cups sugar
1 12-ounce (360 mL) can coconut milk, thawed
(500 mL) 2 cups water
Red food coloring, optional
Cornstarch

Combine mochiko and sugar.
Add coconut milk and water.
Blend well using rotary beater or whip to form a smooth batter.
Add food coloring if desired and pour into an oiled 9 x 13-inch (22.5 x 32.5 cm) pan.
Cover securely with foil.
Bake. Temperature: 350°F (180°C). Time: 1 hour.
Cool.
Cut into 3/4 x 2-inch (2 x 5 cm) pieces and roll in cornstarch.
Yield: About 5 1/2 dozen.
