Muriel's Mainichi Cooking presented by Hawaiʻi Gas is a new JCCH video series inspired by Muriel Miura's mainichi まいにち (everyday) recipes from the JCCH archives that were generously provided by her daughter, Shari Ling. Widely recognized as the face of The Gas Company (now known as Hawaiʻi Gas), Muriel gained popularity through classes, demonstrations, conferences, cooking shows, pamphlets, and cookbooks.
Ingredients (11)
1 pound chicken meat, cut in thin slivers
4 1/2 cups chicken broth
6 small bamboo shoots, slivered
1 medium round onion, cut in thin slices
2 teaspoons salt
2 teaspoons sugar
1/4 teaspoon MSG
2 tablespoons shoyu
1/4 cup mirin (Japanese rice wine)
1/2 cup green onion, minced
6 eggs, beaten

Simmer chicken in broth for 5 minutes.
Add next seven ingredients; bring to boil.
Add green onion.
Pour beaten eggs over chicken mixture.
Cook over low flame for 30 seconds with cover on.
Serve in individual bowls over hot rice.
Garnish with crushed, toasted nori (seaweed), if desired.
Yield: 6-8 servings.
